How to make a salmon, cream cheese and broccoli cake

We start preparing the ingredients that we will use in the cake, for which we put to cook for 5 minutes the broccoli trees in salt water, until leaving them al dente. Once in its point we cool them in water to cut the cooking.

We continue with the salmon that we will have bought in loins better than slices and that we will have asked the fishmonger to give us clean of bones and skinless. We prepare them on the grill until the loins change color and then we crumble them in a bowl, taking advantage to remove the ugly pieces, or the remains of fat or skin that may have escaped the fishmonger. Do not cook it too much because then it will end in the oven.

In a bowl, beat the crumbled salmon with the eggs and the cheese, working the mixture until the cheese is well dissolved and we have obtained a more or less homogeneous kind of cream. We put the oven to preheat to 190º and put inside a large fountain full of hot water halfway. This is where we will then introduce the cake mold to cook it in the bathroom Maria.

In a rectangular cake type mold, we put half of the cream cheese and salmon mixture, cover it with the broccoli pieces that we had reserved and cover them with the rest of the salmon cream. Bake in a water bath until the cream is curdled, which will take about 40 minutes.

We check that the cake is made by putting a wooden skewer and seeing that it comes out clean. Let cool in the oven about ten minutes. Then we leave it at room temperature and when the cake is tempered, we store it in the fridge, covered with plastic wrap. We will not take it out of the mold to decorate it until the time comes that we will serve it.
