Empedrat Recipes for pregnant women

A vegetable salad like this one that we present today, a empedratIt can be an ideal meal for any of us, whether we are pregnant or not. It is a complete and quick meal to make, if we add to all this how healthy and nutritious it is, we cannot stop adding it to our usual diet.

The beans do not provide proteins, carbohydrates, fibers and vitamin A. Natural tuna also helps us by providing iodine, magnesium, selenium and folic acid among other things.

The ingredients for 4 people

300 grams of cooked beans, 1 beet of canned natural tuna, 12 boneless black olives, 1/2 fresh onion, 2 tablespoons mustard, 3 tablespoons oil, salt, 2 anchovy fillets (optional)

The preparation of Empedrat

We chop the onion, olives, and anchovy fillets tiny (if we have decided to add them)

In a salad bowl we put the beans, the onion, the olives and the anchovies.

In a small bowl, mix the mustard with the oil and then add it to the salad bowl, stir everything and serve

We can leave it prepared a few hours in advance and stored in the fridge.

Just as anchovies are optional, some people also add a hard-boiled egg and chopped it.
